Vegetables are important on any diet.

Keto is no different, except you have to eat the RIGHT vegetables.

You don't want those that are too high in carbs, or "starchy". What's an easy way to tell (in most cases)?

Two words: "above" and "below".

Most vegetables that grow *below* ground (roots) are too starchy. Things like potatoes, beets and carrots.

So, generally you want to stick to "above ground" vegetables that are leafy or fibrous-looking ... or "plant-like" (broccoli, cauliflower).

Of course, the "above/below" rule partly depends on how *much* you eat. And some starchy veggies are less starchy that others. But it's a good enough rule you can use it if you don't want to keep track of everything in detail.

Also, vegetables can take a long time to prepare (unless you like to grab and gnaw on raw veggies!).

So ... a simple, time-saving solution is to BLEND them :)

Yes, make a smoothie.

There are lots of plant-based, green, or veggie smoothies out there.

A smoothie packs in an incredible amount of nutrients and save you time.

If a pure veggie smoothie isn't your thing, then try grilling them shish kabob style. Yes, you have to cut them up and take the time to grill 'em... but they sure are tasty that way!
